Wonderful, Belinda! Have fun! I found with my leaven that it was a little slower than Dan's, but then it turned into leaven-on-steroids... I can have about a teaspoon left in the jar, add flour and water to fill the jar, and it'll be bubbling over in half a day! For the bread-maker, just remember that the crust won't be crunchy.

Hi Duncan, I just happened to stumble across your article - excellent! I've since found Dan's book in a local bookshop and am ready to try the manual cycles on my bread machine... after I make the leaven of course! Thanks for sharing the photos, they're really helpful :-)

I want the recipe for a sour dough starter, so I think you will have to do a post on that part of the process. Yes it all seems extremely complicated but hey I love making bread and have always wanted to make sour dough. I hope you smothered it with nice cold real butter when it was still warm? I love bread like that. So fresh, homely and comforting. Making bread is a true love story.
