		<description>recipes calling for the juice of x lemons were a pet hate of mine when I started cooking, so years ago I decided to test several lemons of different types to try and find the average volume of juice. Oddly enough, irrespective of the type of lemon, I discovered that once the pulp was strained a normally juicy lemon gave between 38-42ml of juice.  I have found an average of 40ml seems to work well for all recipes from tarts to lemon curd.</description>
